The Best Fluffy Chocolate Cupcakes

Are you tired of uses enriched all-purpose flour in your baked good recipes? Want to use whole wheat instead?

Well, I definitely do, and so for my birthday I made this recipe for chocolate cupcakes instead of a typical cake, and used the chocolate buttercream frosting from the other day’s post! :) 

The BEST combo I’ve ever made for really tasty and super delicious chocolate Birthday cupcakes! We don’t eat sweets that often in my house, and even with that being said, these cupcakes were all gone by the next day! :D  

Since I didn’t really want to make that many cupcakes for two people, this recipe will make you 9 cupcakes. So just double or triple the recipe as needed!

How To Make The Best Fluffy Chocolate Cupcakes! :D 

  • Preheat oven to 350 degrees.

  • In a small bowl, lightly mix together and set aside:

  • 2 cup plant milk

  • 1/2 TBSP apple cider vinegar

  1. In a large mixing bowl, whisk together:

  • 1 cup of whole wheat flour

  • 3/4 cup of Truvia cane sugar blend (stevia & cane sugar blend-has 75% less calories and sugar!)

  • 1/2 cup cocoa

  • 1 tsp baking powder

  • 3/4 tsp baking soda

  • 1/2 tsp salt

  1. In a small bowl, mix together:

  • 1/4 cup of melted coconut oil

  • 1/3 cup (cinnamon) applesauce

  • 1/2 TBSP vanilla

  • 1/4 tsp almond extract

  1. Stir the plant milk and apple cider vinegar mixture one last time, and then gradually, with your electric mixer, beat all wet ingredients into the bowl of dry ingredients!

  2. Line your cupcake baking tray with 9 cupcake liners and grease with a cooking spray. Bake at 350 degrees for about 20-25 minutes, or until the cupcake centers come out clean with a toothpick.

3. Let the tray of cupcakes sit outside of the oven for a few minutes before transferring each cupcake onto a wire cooling rack to finish completely cooling.

4. Once completely cooled, put your chocolate buttercream into a piping bag with a large tip of your choosing. Press the piping bag into the middle of each cupcake and squeeze chocolate buttercream into the centers, creating a cream like deliciousness when you bite into them 😋

5. Then, starting from the middle of your cupcake, start piping towards the outward rim of your cupcake, while continuously making frosting circles until you reach the very center of your cupcake 💖 Leave your cupcakes how they are as chocolate cupcakes or top with fresh raspberries or pomegranate 😍 Makes 9 very delicious cupcakes 🔥

6. For the frosting, you will need:

  • 3/4 cup softened vegan butter

  • 1/2 cup cocoa powder

  • 2 cups powdered sugar

  • 3 TBSP plant milk

  • 1 & 1/2 tsp vanilla

  • 1/2 tsp almond extract


What You Need To Do:

  • With your electric mixer, beat together the butter and then gradually beat in the sugar.

  • After combined together, add in the rest of the ingredients and mix well until all combined.

That’s it, you are done! This makes about 2 cups of very rich and delicious Chocolate Buttercream Frosting! 😋
