How To “Veganize” Store-Bought Pancake & Waffle Mix!

I don’t know about you, but sometimes you just want waffles or pancakes in a quick pinch like everyone else and not have to spend an eternity getting all small ingredients together to make it happen!

Sometimes it nice to be able to buy store-bought boxed items and just “tweak” the ingredients that you add to it in order to make it vegan-friendly!

So today, I am showing you how to easily take some whole wheat pancake and waffle mix from the store, that already doesn’t have animal products in the mix, and keep it vegan!

Also, I prefer to not add oil to my foods if I don’t have to, and so today’s “food-hack” will not only replace the eggs that you are supposed to add to the mix, but also the oil they want you to add as well! 😎

The Ingredients You Need :

  • 1 ripe banana, mashed

  • 1 cup waffle mix

  • 1/4 tsp baking powder

  • 2 tsp pumpkin spice

  • 1 cup of storebought vegan-friendly mix (that doesn’t have dairy ingredients already in the mix)

  • 1/2 tsp vanilla

  • 1/3 cup nuts

    Directions:

  1. In a medium to large-sized bowl, mix together the dry ingredients first, ingredients 1-4, then mix in the rest of the ingredients until well combined.

  2. In your preheated waffle iron or large frying pan, apply cooking spray to both sides of your waffle pan or frying pan, then put in 2/3 cups batter in the middle of your waffle iron. Spray the top of your batter to be extra sure that your waffles will definitely not stick to the pan. Close the lid and cook for 2-3 minutes, flip over, and cook for another 2-3 minutes for each waffle or pancake!
