15 Minute Or Less Roasted Potatoes

Who doesn’t love potatoes!? Seriously though, potatoes have always been my favorite foods! Doesn’t matter if they are mashed, fried or broiled, hand em’ over! 😀 

 I do however do my best to avoid excess oils like deep frying and using butter often in my life, so in this post and video I will be showing you how to make very quick oven roasted potatoes in less than 15 minutes, with minimal oil! 

Because let’s face it, you don’t always have to time to be in the kitchen for eternity to make a healthy dinner for you and your family! So why not make a quick side of potatoes while you prepare the rest of your dinner, and have it all on your table in 15 minutes? (or less, depending on how thick you cut your potatoes! 😀 ) 

Okay, here we go! Quick, simple and straight to the point! : 

  1. First, set your oven to broil on high heat. You want to do this first before you start preparing your potatoes because if you don’t, then starting the broiler when you put your potatoes in the oven will add you another 3-5 minutes of cook time.   

  2. Wash and dry 2 red potatoes and a regular sized sweet potato, or just 4 red potatoes, or 2 regular sized sweet potatoes. Cut them up into whatever sizes that you want, but for the traditional roasted potato style, cut them up into little chunks.  

  3. Add whatever kinds of spices that you like, such as Cajun seasoning, BBQ seasoning, lemon pepper, smoked paprika, chili powder, simple salt and pepper, etc. Or to keep things really simple, add in a little bit of sea salt, fresh cracked pepper, and around a 1/2 tsp of garlic powder and Italian seasoning with 1-2 tsp of olive oil.  

  4. Mix well with your hands to combine and put onto a large baking tray. Make sure that no potatoes are layered on top of each other. Stick the tray onto the second highest rack of your pre heated oven on high broil heat.  

  5. Set your timer for 6-8 minutes and check to see if the tops of your potatoes are colored and browned. Once they are, flip them over and put them back into your oven for another 5-7 minutes, or until your potatoes are nice and crispy to your liking!  

Anddd WHAAA-BAM!  😀 😀 😀 All done! YESSSSSS!!

It’s really this easy to make delicious potatoes as part of a quick side dish for any meal! Same goes for quick broiling vegetables like cauliflower, broccoli, carrots, etc.!

*Also, you could use this cooking method with making lots of different kinds of potato dishes. Baked fries, little potato bits, slices, or more. It doesn’t matter, just adjust the time and amount of ingredients for the size of potatoes you wind up putting in your oven 😉
