Party Mac And Cheese πŸ˜‹πŸ§€

Vegan Mac and Cheese! This is one that has been highly requested by a lot of people who have tried it!

And guess what?..

They were all not vegans, so you know it's really good if I can not only fool nonvegans but also have them strongly ask me for the recipe! 

I recently made mac and cheese for a party and didn't tell anyone that it was vegan.. But guess what?

It was all eaten and multiple people asked me to post the recipe for it! So, here it is by request!

Now, the recipe that I am about to share with you is a versatile one. I used it for mac and cheese, however, if you want to use the sauce straight how it is, you could add it to a tofu scramble sandwich as a cheese-like spread, or use it as the main base for a broccoli cheese and bean soup! πŸ˜πŸ˜‰

So, first I am going to share the main cheese sauce recipe, and then show you how to use it in your meals! πŸ˜ŽπŸ’―

The cheese sauce recipe is as follows. In your high-speed blender, add in:

  • 1 TBSP bottled lemon juice

  • 1 cup of fresh baby carrots, boiled and drained

  • 1/2 of a red bell pepper (about 1 cup diced)

  • 2 cups of raw cashews (boil tea kettle water and pour over cashews in a bowl. Let soak for 5-10 minutes to soften, then rinse and drain)

  • 1/2 cup nutritional yeast

  • 1.5 tsp turmeric

  • 2 TBSP hot sauce

  • 1 tsp lemon pepper

  • 1.5 TBSP garlic powder

  • 1.5 Cups of plain plant milk, OR water (I used plant milk)

  • 2 TBSP olive oil

  • 1 tsp salt

 >>Blend until well combined and very creamy!

To make mac and cheese, boil 1 and a half pounds of pasta until aldente, drain and return to the pot with 2 bags of vegan cheese (about 4 cups).

Stir hot pasta with the cheese to start melting and combine. Then, add in the cheese sauce, turn on the heat to medium, and stir to well combine.

Let cook 2-3 minutes, stirring throughout, until the cheese has melted into the mac and cheese and everything is warm or hot to your liking.

The cheese sauce alone makes about 4.5 cups, and making 1.5 pounds of pasta into mac and cheese makes about 11 or 12 servings! 😍 

>>To make into a soup: For every 1 cup of cheese sauce, add in 1 cup of black beans (rinsed and drained first) and 1/2-1 cup of chopped steamed broccoli.

Thin out with plant milk until your liking. Add in garlic or onion powder if you thinned it out too much and need more flavor. Top with salsa if you desire.

Other good add-ins would be boiled diced potatoes or leftover pasta! πŸ˜‰ This makes a nice and creamy cheese like soup! πŸ₯°πŸ˜‹
