4 Ingredient Meat And Cheese Egg Rolls! 😍

Egg rolls! Who doesn’t love them??

I’ve never met someone, vegan or not, that didn’t like egg rolls! They are crispy and delicious on the outside, and really you can stuff them with whatever you want on the inside! 😋💯

To make egg rolls vegan, you just need to make sure that you are buying vegan products to make your rolls!

As you can imagine, the most common egg roll wrappers that you can buy at the store are made with eggs.

However, I am noticing more and more nowadays that it is becoming more common to stock the shelves, at least at the stores that I shop at, with vegan versions instead!

They cost just about the same price as the egg version, and I’ve noticed that the same companies that make the regular egg version, are the same companies making the vegan version! So, getting vegan egg roll wrappers are easy to find, Check! 

Next comes what you want to fill your rolls with!

For me, I just chose a store-bought vegan meat substitute and vegan cheese shreds alternative, that’s it! And I’ve got to say, just using these two ingredients on the inside made these egg rolls so very good 😋

It’s kind of addicting! 😉 

Now, I chose to use “Soyrizo” as my meat substitute because since discovering it, Soyrizo has become a go-to already made vegan meat substitute for our household!

It’s got that meaty taste and feel to it, all at the same time having a nice flavor with a little extra spiciness to it!

If you don’t want to use this as your substitute, then simply just use a different vegan version of ground beef or something similar 😘 

For the cheese, use whatever kind of vegan cheese shreds alternative of your choosing.

At my local store, I only have one brand and flavor option for this. So for this recipe, I chose to use Mexican flavored vegan cheese shreds and it worked out pretty well! 
 

Now, this is all that you do, it’s really simple, quick and easy!

Directions:

  • Get out 4 egg-less egg roll wrappers, 1/2 of a package of Soyrizo or some other vegan meat alternative, 1/2- 2/3 cup of vegan cheese shreds alternative, and olive oil for frying.

  • Cook your meat substitute in a teaspoon to a tablespoon of olive oil in a frying pan. Stir together, then cover for 45 seconds to 1 minute. Stir again and just make sure that you cook your meat all the way through so that it is hot and fried. Set aside in a bowl.

  • Starting at one side of your egg roll wrapper, do your best to evenly add in 1/4 of the cooked meat substitute, followed by 1/4 of the cheese substitute

    Roll up your egg rolls, one at a time, in the same fashion as you would a burrito. Fold in the two sides and then roll your filled wrapper away from you until the whole thing is wrapped.

    Use a small amount of water on your finger to seal together with your egg rolls. Do this with all of your ingredients and set your finished egg rolls aside.

  • In a small frying pan or deep fry if you choose, add in a little bit of olive oil, heat over medium heat, and fry 2 egg rolls at a time after your oil is hot.

    Cover if you choose (ONLY IF YOU ARE NOT DEEP FRYING!) in order to crisp up your eggrolls faster, and cook for up to 1 minute per side.

    Once all sides are nice and golden colored and crispy, put your finished egg rolls onto a cookie cooling rack. Finish this process with the other two egg rolls! Enjoy hot and crispy! 😋😍💯😎✨✨
